What a good harvest! Despite of the bad weather and the late period of the vintage, the juices are already fermenting in the tanks!
We separate the stems from the grapes just picked up from the vineyard, and the grapes macerate for 5 or 10 days, depending on the type of wine.
At the end of the maceration, we exctract the finest juice and through the pressing the last juice is exctracted and the seeds and the peel are finally separated from the wine.
… Good fermentation!
